Recipe: Late-August P-L-T

August is both National Sandwich Month and National Peach Month — or so everyone tells us. To that end, we present a combo-concoction: Our Special Peach, Lettuce & Tomato Sandwich.

And here it is! (Recipe follows)

Priceless Princeworth PLT

  • Loaf of sliced bread (toasted)
  • Several medium-to-large-size peaches, cleaned, skinned and (probably) pitted
  • Tomatoes (sliced)
  • Lettuce (flattened)
  • Peach Schnapps (optional, if desired — and who wouldn’t?)

Soak peaches in the “liquid refreshment.”  Slice tomatoes, which already should have been sliced, according to ingredients list. Slice peaches into slices. Preheat oven to 325 degrees, just as a course of routine. When oven is preheated, turn it off and continue. Finish toasting bread loaf slices. Discard unused schnapps into large bowl of orange juice, stir vigorously. Pour mixture into collins glass, over ice, while discussing memorable Peach Bowl highlights. Place peaches, lettuce and tomato between two bread slices, while supplies last. Serve and consume.

Yield: Feeds everyone around.
